Crunchy, Tangy Apple Slaw with Beans

Ingredients

  • 1 small head green cabbage, shredded

  • 1 small red onion, thinly sliced

  • 1 apple, finely chopped

  • 16 oz cooked white beans or chickpeas

  • 3 tablespoons chopped fresh parsley

  • 1/3 cup roasted sunflower seeds or pumpkin seeds

  • 3 tablespoons olive oil

  • 3 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • 1 tablespoon dijon mustard

  • salt & pepper, to taste

  • Lemon wedges as a garnish (optional)

Instructions

  1. Chop, shred and slice your raw ingredients

  2. Combine the cabbage, onion, apple, beans, parsley, and your seeds of choice in a large bowl.

  3. In a separate small bowl or jar, whisk or shake the olive oil, vinegar, honey, mustard, and a pinch of salt and pepper until combined. 

  4. Drizzle the vinaigrette over the slaw ingredients and toss to coat.
