Cooked Radicchio
Also known as Italian Chicory, radicchio is a bright, slightly bitter perennial with a deep purple color. This simple recipe makes a great side dish and pairs wonderfully with the addition of walnuts and apples!
Ingredients
2 bunches of radicchio
Garlic
Minced or crushed rosemary
Red wine vinegar
Extra virgin olive oil
1-2 apples chopped (optional)
Walnuts or nut of choice (optional)
Salt
Pepper
Instructions
Clean and pare the radicchio and blanch it in unsalted boiling water for no longer than 2 minutes. Drain the radicchio and gently squeeze it dry.
Chop or dice apples and place in a bowl. Set aside.
In a large pan, fry a garlic clove in 3 tablespoons oil until just starting to darken, then add the radicchio, salt and pepper to taste and 1 tablespoon minced rosemary. Pour 2 tablespoons vinegar over everything. After cooking for 1-2 minutes, remove from heat and let cool.
Fold in apples and walnuts (or your nut of choice) to your cooked radicchio and serve warm.
