Vegan Sweet Potato Casserole
This sweet Thanksgiving classic is vegan, super simple to make and seriously delicious!
Ingredients
4 Large sweet potatoes
4 tbsp butter
1/4 cup coconut sugar
1tsp vanilla
1 1/2 cup pecans
2/3 cup oat flour (blended oats)
1/4 cup maple syrup
Instructions
Cut sweet potatoes in half and lay face down on sheet pan. Bake at 400 F for 30 minutes. Ensure potatoes are soft when you poke them. If not, keep baking. Once soft. remove from oven and let cool.
Scoop potatoes out of their skin and combine with 2 tbsp softened butter, coconut sugar and vanilla. Spread into a 9x13 dish.
Combine the pecans, 2 tbsp softened butter, maple syrup and oat flour into a bowl. Spread onto top of the sweet potatoes. Bake dish at 350 for 30 minutes.
