Garlic Ginger Noodles

Our take on this Asian inspired dish uses only the freshest ingredients— most of which are available at the Farm Stand!

A warm, savory dish made complete with our organically grown ginger and garlic. This recipe is highly versatile and full of fresh veggies that can be swapped according to your preferences.

Ingredients

  • 2 inch piece organic ginger -minced

  • 2 green onions chopped, white and green parts separated

  • 2 cloves of garlic minced

  • 2 stalks of celery sliced thinly on an angle

  • 2 carrots finely chopped

  • 4 cups vegetable broth

  • 4 Tbs Reduced sodium soy sauce

  • 2 Tbs Olive oil or Sesame oil

  • 16 oz noodles of your choice

  • Optional: Chili flakes or sesame seeds

Instructions

  • In a large pot, heat the oil over medium heat. Add the ginger, garlic, and the white parts of the green onions. Sauté for about 2-3 minutes until fragrant, stirring frequently.

  • Add the vegetables and stir for 2-3 minutes

  • Add vegetable broth and soy sauce.

  • Bring the soup to a gentle boil, then reduce the heat to low

  • Add noodles and let it simmer for 10 minutes or until noodles and vegetables are tender

  • Serve the soup in bowls and garnish with the green parts of the green onions.

  • Optional: Sprinkle some chili flakes or sesame seeds on top for extra flavor!
