Garlic Ginger Noodles
A warm, savory dish made complete with our organically grown ginger and garlic. This recipe is highly versatile and full of fresh veggies that can be swapped according to your preferences.
Ingredients
2 inch piece organic ginger -minced
2 green onions chopped, white and green parts separated
2 cloves of garlic minced
2 stalks of celery sliced thinly on an angle
2 carrots finely chopped
4 cups vegetable broth
4 Tbs Reduced sodium soy sauce
2 Tbs Olive oil or Sesame oil
16 oz noodles of your choice
Optional: Chili flakes or sesame seeds
Instructions
In a large pot, heat the oil over medium heat. Add the ginger, garlic, and the white parts of the green onions. Sauté for about 2-3 minutes until fragrant, stirring frequently.
Add the vegetables and stir for 2-3 minutes
Add vegetable broth and soy sauce.
Bring the soup to a gentle boil, then reduce the heat to low
Add noodles and let it simmer for 10 minutes or until noodles and vegetables are tender
Serve the soup in bowls and garnish with the green parts of the green onions.
Optional: Sprinkle some chili flakes or sesame seeds on top for extra flavor!
