Gateway Farm Holiday Salad
Pair this unique autumnal salad with your favorite holiday meal. All the ingredients can be found at our Farm Stand!
Ingredients
.5# Wild Salad Mix - Lettuce, Arugula, Nasturtium & Cranberry Hibiscus ( Or Lettuce Mix)
1# total (2-3 of each depending on size) Carrots, Beets and/or Parsnips
2 tsp Gateway Farm Purple Basil or Fiesta Sea Salt
3-5tbs Taste of Petra Olive Oil
1 Apple or 6 Figs
1/2 cup Your Favorite Seed or Nut from Ferris Nut Co. - Pecan, Almonds, Walnuts, Pumpkin Seeds
Microgreens and/or Pea shoots
Fig balsamic Drench Salad dressing (Or a homemade dressing with Taste of Petra Olive Oil, pomegranate molasses, Za'atar and salt)
Instructions
Dice Carrots, Beets and/or Parsnips coat them in olive oil and a sprinkle of Basil or Fiesta Sea Salt.
On a metal baking sheet roast the vegetable at 425F for 30-45 min, until the edges of the veggies are browned and caramelized. Flip half way through cooking.
Remove veggies and let them cool to just warm while you prepare the rest of the Salad
In a large serving bowl add Wild Salad Mix, warm roasted vegges, thin slices of apple or fig, seeds or nuts of choice and micro greens.
Serve with dressing on the side or premix for ease of passing around the table.
Notes
1. Add your choice of protein: Roasted Chickpeas, Feta Cheese, Chicken, or a Hardboiled eggs to make this salad a whole meal!
2. You can serve the roasted veggie cold or at room temperature as well.
