Squash, Mustard Greens & Apple Salad

Dare we say, the perfect fall salad! Add in your favorite nut, seed or bean for an extra boost of protein and healthy fats. Most of these ingredients can be found at our Farm Stand.

Ingredients

  • 1 Squash

  • 3/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 2 teaspoons vinegar

  • 1 tablespoon olive oil

  • 4 cups mustard greens, chopped

  • 1 apple, thinly sliced

  • 1/2 cup red onion, thinly sliced

  • 1/2 cup nuts, seeds, or beans of your choice (optional)

  • 1/4 cup crumbled blue cheese (optional)

Instructions

Cut your squash of choice into small cubes or thin slices; season with 1/4 tsp salt and black pepper. On an oiled grill or grill pan over medium-high heat, grill until tender— about 10 minutes per side. In a bowl, whisk 2 tsp vinegar, 1 tbsp olive oil and 1/2 tsp salt. Toss with 4 cups mustard greens. Add in your squash, apple, red onion and crumbled blue cheese (optional). Toss and serve.
